Yellow carrot soup
As I mentioned in my carrot post, one of the things I made this week was carrot soup, which as usual I made up as I went along. I used carrots, silken tofu, onion, garlic, ginger, curry powder, and vegetable broth, all cooked together and then pureed with a stick blender. Heavenly - made me wonder why I don’t buy carrots more often!
I used the yellow carrots, but I’m betting the soup would have been even more beautiful with the red ones.

I’m a huge fan of carrot soup. When I make it I usually add a bit of soy milk rather than tofu and I put my heated carrot mush into the blender. I bet the yellow carrots you used looked beautiful. Thanks for sharing your yummy ingredients!

Definitely going to save this one for a fall dinner. It has all the makings of a great “comfort” soup. :)
