What’s your favorite vegetarian cookbook?

With the vast array of recipes on the internet, I usually turn to Google before running to my cookbook shelf, which is full of dusty old tomes that remind me of college (which is when I used to use most of them). There’s the Moosewood Cookbook, which was all the rage back in the day. I learned the basics of Italian cooking from my well-loved Vegetarian Table: Italy. And Quick Vegetarian Pleasures has traveled with me to four different countries, although I can’t remember the last time I used it.
It just occurred to me that I haven’t purchased a new cookbook in ages. It’s probably been at least 5 years, maybe even longer. The one exception to this is the big, glossy Joia book from my favorite vegetarian restaurant in Milan, but I think of that more as an art book than a cook book (if you’ve ever had the fortune to eat at the restaurant, you’ll understand why - the food itself is easy to confuse with art).
So these days I find myself longing for a new book or two to add to the collection. Preferably something that will teach me fabulously delicious, easy, healthy recipes to add to my everyday rotation. Does such a book exist? What’s your favorite cookbook?

Not sure this one will become your favourite since you already have Italian cookbooks on your list but I very much like it: Truly Italian

For what you’re looking for, I can *highly* recommend “The Vegan Mediterranean Kitchen” by Donna Klein. It’s one of my all-time favorite cookbooks. All normal ingredients, all original meditteranean recipes that just happen to be vegan (Greek, Spanish, Italian, French…). It’s great!
Also, it’s not always so healthy, and maybe a little US-centric, but “Vegan with a Vengance” is a truly amazing cookbook with some life-changing recipes!
Those are two of my top favorites.

Anything by Anna Thomas is great (The Vegetarian Epicure, The New Vegetarian Epicure, and then later get The Vegetarian Epicure Book II after the others). Also, I have not tried them yet but also hear Madhur Jaffrey is good for Indian vegetarian cooking.
