And you are absolutely right.
Vegan in the French-speaking world is quirky and uncomfortable. I find it rather difficult to be a vegetarian in France than in the UK, especially in my region, Alsace, where evyerthing, I mean everything, has to have “lardons” or “speck”, little cubes of bacon sort of thing. People never question it. It tastes good, that’s what they’re used to. People are not willing to give up the tastes they’re used to. When I suggest alternatives, no matter how simple they are like switching to soya milk in the coffee, I get the question: does it taste nice? You can imagine the sort of challenge it would be to make them eat vegan pains au chocolat…

It seems like every time I’m reading a French menu, and something starts to sound good to me, a close inspection of the description reveals the word “lardons” hidden in there somewhere. It drives me crazy!
