Alas, some people can’t leave well enough alone: scientists in the US are developing new kinds of soy that will yield extra protein when processed. When people warn you about the dangers of soy, I think this is the kind they’re talking about.

Processing soy?
It reminds me of the Michael Pollan article you linked to a couple of weeks ago. When “food science” tells you that they are modifying food to make it healthier you should stick to the original product.

Interesting article, thanks for posting.
Call me backward-thinking but when scientists start to play around with food using technology, it gets scary. I agree with Ward and feel strongly about the fact that what we eat should be in its natural form, as Nature intended it to be.
