V.C. Challenge Day 1: Kohlrabi and Persimmon
I went a little crazy at the grocery store on day one of my fresh food challenge. In addition to my one new fruit and new vegetable, I bought tomatoes, bell peppers, broccoli, squash, clementines, limes, and chestnuts. I feel healthier just looking at it all sitting there! But seriously, I better get eating if I’m going to use all this up, especially since I’m supposed to be buying even more stuff over the next six days.
Today’s new veggie is a kohlrabi (I looked it up to make sure - it really is called kohlrabi in English, even though I had never heard of it before I moved to the German-speaking world). My friend Ali has been bugging me to try it for a while now. She was right, these things make delicious, healthy snacks, just peel and slice. The flavor is mild, slightly sweet and slightly nutty. They can also be used in stir fries and other dishes.
The fruit of the day is something that was advertised as a ‘Vanilla Kaki’ persimmon. I love vanilla, and I can’t remember the last time I ate a persimmon, so I decided it was the perfect fruit to try today.
As for the rest of today’s fresh produce, the squash and bell peppers will go into my husband’s favorite recipe for Arabian Squash Casserole from the Moosewood Cookbook. I’ll stir-fry the broccoli with some garlic and quorn to complete the meal. The tomatoes will go into a salad for lunch, and the limes will get squeezed to make dressing. The clementines will make delicious, healthy snacks.
