Truffle oil, the new love of my life

img_7346.JPGLooking for a healthy way to add orgasmic flavor to a soup, salad or pasta dish? Truffle oil may be just what you’re seeking. The golden liquid is simply olive oil infused with the aroma of white or black truffles (white is best), and it is extremely flavorful. So flavorful, in fact, that you need a very, very small amount to complete change the flavor of a dish.

Remembering truffle oil fondly from a couple dishes we had enjoyed in Italian restaurants, I searched all over Zurich for this stuff with no luck. I finally was able to pick some up in a specialty oil store when visiting my friend Riana in southern France. Only after I returned to Zurich did I learn that it is sold here in Migros, the low-end grocery store where I do almost all my shopping. I never even thought to look there.

Urbani White Truffle OilHere’s a simple and easy way to enjoy truffle oil: prepare a salad of arugula, halved cherry tomatoes, toasted walnuts, and shaved parmesan. Drizzle a very small amount of truffle oil over (much less than you would use of regular olive oil on a salad), and dress with vinegar, ground pepper, and salt to taste. This dish is to die for, but really truffle oil tastes good on top of almost anything. And, specialty foods such as truffle oil make fabulous gifts for the foodies on your list…

    Yummm! I just made gravy today with a touch of truffle oil and it makes all the difference… glad that you found a place to get it there for next time!
