The world’s ugliest vegetable

IMG 3770Celeriac is often called celery root in the US, but it’s not really the root of a celery plant (but rather the root of a different kind of plant all together). It’s a very versatile vegetable - it can be pureed, sautéed, used in soups and stir-fries, shredded in salads, and so on. But man is it ugly.

You lose a lot of the root’s size when you trim it, taking off the outer ugly bits to get to the uniform white inside. But what is left is definitely worth the effort - the taste is really a treat. My preferred treatment of celeriac is to chop it into small cubes and sauté it in olive oil, adding a squeeze of lemon juice and a bit of salt and cooking until tender. Simple and delicious!

    It might look ugly, but it’s definitely one of the tastiest vegetables around. I love it so much!

    I never really saw it that ugly but you’re right!

    I only use it for soups (mixed with carrots, potatoes and swede), it gives it that unique flavour. I will try your recipe.
