Rhysipe: Falummus Sandwich

Haha, rhysipe, get it? To get it, you must know my name is pronounced ‘reese.’ Now does it make sense? Oh well, maybe it’s not that funny. But I’m using it anyway.
When talking about going veggie, many people tell me, “But Veggie Chic, I’m poor, and lazy, and have no interest in cooking! Doesn’t that mean I can’t be a vegetarian?”
Not at all my friends, or else I wouldn’t be one, either. These are valid concerns, but it’s surprisingly easy to eat cheap and healthy, with no need for fancy food or complicated cooking.
Not that cooking is bad; in fact, many people love cooking and delight in gourmet vegetarian meals. That’s wonderful, and I’ll provide links to meals like those, but as far as my expertise goes, these rhysipes will be for the non-gourmets out there.
As always, I stumbled upon this by accident, because of my usual penchant for blending things just to see what would happen. (Blame it on my love of Chemistry.)
All you need is: a box of falafel mix, some hummus, and some pita bread. All of these can be found at budget prices in your supermarket. No need to travel to a fancy health food store. I use, and recommend, ‘Fantastic Foods’ brand falafel mix. It’s the cheapest out there, you can get it anywhere, it tastes great, and it’s 100% guaranteed vegan.
Choose whatever bread and hummus you like, although I’ve found the best combination to be with ‘black olive’ flavored hummus.
Here’s where it gets even simpler. First, follow the directions on the falafel box: add some water to the mixture and let it sit 15 minutes. Now, ignore the directions. Who has time to shape the mix into dainty little balls and fry them? Who wants to buy a fryer? And why would we fry falafel in grease…aren’t we trying to be healthy?
Just smoosh the wet mix into hamburger-sized (ironic, eh?) patties and put them on a baking sheet. Bake them at 350 degrees for about 5 minutes, or until they’re as firm as you like.
Spread some hummus into your pita bread. Crumble some falafel patties into each half. Eat it, and delight in the taste and healthiness. (You can add some more vegetables if you’re feeling super healthy.)
One small caveat: if you’re not used to falafel, which is after all, simply ground beans and spices you may encounter an increased noise level coming from your tushy for a while. But no worry; just consult this highly scientific article for assurance.
And always remember, non-Veg Heads can enjoy these rhysipes, too.

I just dont have the slightest idea what those ingredients are. But, a sure-fire healthy meal it is.

Oh I just love the falafel mix from Fantastic Foods! I didn’t think to add hummus to the pita. I usually use fat free oil free italitan dressing on my falafel.
And who would fry them? I don’t see the point in that either. Though if I get a falafel at a restaurant, it has this crispy outer edge that I don’t get when I bake my patties. I’ve been cooking witout oil (McDougall style) and have discovered you only get that outer crispy edge on things because of the oil (unless I seriously burn things which I do a lot - tee hee).
